Calcium alginate, CALGYSO, is a white to yellow powder, almost odorless & tasteless. It is insoluble in water & ether, slightly soluble in ethanol & slowly soluble in sodium carbonate.
Applications
- In foods as binder, thickener, water-retention agent. In presence of sodium ions of foods, it exchanges the calcium ions leading to increased thickening
- As stabilizer, thickener, emulsifier, plasticizer
- For making wet adhesive for skin electrodes & as haemostatic agent
